
January is a good time to add in some healthy vegetables, and nice, hot stew or soup is a good way to do that. Bone broth is another way to reset some health goals. So today I combined the two. I started last night making homemade bone broth with bones from the chicken thighs we had for dinner. In the crockpot, I threw in the bones and skin, water, 2 tablespoons of apple cider vinegar, and some vegetables for flavor. It needed to cook on low about 24 hours. Today I strained everything out, leaving just the broth. Then I added my favorite fresh vegetables, seasonings, and some grilled chicken. One of the great things about stew, is that you can add in your favorite ingredients. Personally, I like to keep it simple: carrots, celery, and cabbage with just salt and pepper. Other times I add in more spices, beans, and cheese. Split peas are also great in this stew. The idea is just to get more healthy vegetables and have a delicious dinner.
My goal this year is to make changes that stick. Replacing the canned store-bought soup with something homemade is a good start.(Just read the ingredients on the labels and you will see why.) Most soup freezes well and can be heated up on that night you need a quick meal or someone doesn’t feel well.
